Ingredients

  • 4 6- to 8-inch soft corn tortillas
  • 1/2 teaspoon ground cumin
  • 1 16-ounce can black beans, rinsed and drained
  • 1 chipotle chili in adobo sauce, diced; or 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup mild salsa
  • 4 large eggs, fried
  • 2/3 cup shredded Monterey Jack cheese
  • 1 ripe avocado, sliced

Directions

  1. Heat oven to 425° F.
  2. Put the tortillas on a baking sheet and place in the oven to warm, about 5 minutes. (Cover with foil if you don’t like crisp tortillas.)
  3. Toast the cumin in a small, dry saucepan over medium heat until aromatic, about 3 minutes. Add the beans and chipotle or red pepper (if using).
  4. Remove the tortillas from the oven. Spoon some beans onto each, then top each with some salsa, 1 fried egg, and some cheese.
  5. Bake until the cheese has melted. Serve with the avocado.

  • 4 medium plum tomatoes, diced
  • 1/4 cup chopped red onion
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon fresh lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 can (15 oz) low-sodium red kidney beans, rinsed and drained
  • 1 tablespoon chopped chipotle chiles in adobo
  • 4 fat-free 8-inch flour (or whole-wheat) tortillas
  • 1 avocado, thinly sliced
  • 4 cups baby spinach
  • 1 cup reduced-fat shredded cheddar

PREPARATION

  1. In a bowl, combine tomatoes, onion, cilantro, juice, cumin and salt. In a second bowl, mash beans; stir in chipotle. Working one at a time, top half of each tortilla with 1/4 avocado slices, 1/4 bean mixture, 1 cup spinach and 4 tbsp cheese; fold in half. Heat a large nonstick skillet over medium-high heat; add 1 quesadilla and cook, flipping once, until both sides are brown and crispy, 1 to 2 minutes per side. Repeat with remaining quesadillas. Let cool slightly; cut each quesadilla into 3 wedges; serve with tomato salsa.

Ingredients

  • 2 tablespoon orange juice concentrate, thawed
  • 1 tablespoon pepper(s), chipotle chiles, in adobo sauce, finely chopped
  • 1 tablespoon vinegar balsamic
  • 2 tablespoon molasses, unsulfured
  • 1 teaspoon mustard, Dijon
  • 1 pounds chicken, breast, boneless, skinless, trimmed
  • salt, to taste

Recipe Tip:

Remember fresh is always best, so ignore that concentrated OJ and pick the fresh orange juice.

Preparation

1. Preheat grill or broiler.

2. Whisk together orange juice concentrate, chipotle peppers, vinegar, molasses and mustard in a small bowl.

3. Lightly oil the grill or broiler rack. Season chicken with salt and grill or broil for 2 minutes. Turn, brush with the glaze and cook for 4 minutes, brushing occasionally with glaze.

4. Turn again, brush with the glaze, and cook until the center is no longer pink, 1 to 2 minutes longer. Serve hot.

It’s a day that most of us stop working at 5pm so we can get our weekend started…Eating, drinking, partying, spending time with our loved ones, cleaning, resting or just plain ole relaxing. Well, I have decided to try something new once a week and then share them with you all as my MUST TRY CAPTION ON FRIDAYS.  This weekend must try is a place called Free Birds World Burritos. If you love a place call Chipotle you will love love this place…FREE BIRDS WORLD BURRITOS!!!! It’s buffet style restaurant that allows you to get in line and make your burritos, tacos, salads, and burrito bowls that way you like it. For all of you healthy lifestyle people out there that are making a change for the good they offer different flavored flour tortillas, such as; spinach, Cayenne, and wheat. The variety wooed me as well as when I asked for my tacos and found out they only had plain ole flour tortillas and then the amazing customer service came in when my server stated that she could take the burrito tortilla and cut it to my taco size….AMAZING.. I had spinach tortilla chicken tacos. I am switching my taco place to FREE BIRDS WORLD BURRITOS!!! I might have to travel a little to get me some but it is so worth it…GREAT FOOD AND AWESOME CUSTOMER SERVICE…ITS LIKE BURGER KING YOU CAN HAVE IT YOUR WAY!!!! I give FREE BIRDS WORLD BURRITOS a FIVE STAR MUST TRY!!!!
