  • 4 6- to 8-inch soft corn tortillas
  • 1/2 teaspoon ground cumin
  • 1 16-ounce can black beans, rinsed and drained
  • 1 chipotle chili in adobo sauce, diced; or 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup mild salsa
  • 4 large eggs, fried
  • 2/3 cup shredded Monterey Jack cheese
  • 1 ripe avocado, sliced


  1. Heat oven to 425° F.
  2. Put the tortillas on a baking sheet and place in the oven to warm, about 5 minutes. (Cover with foil if you don’t like crisp tortillas.)
  3. Toast the cumin in a small, dry saucepan over medium heat until aromatic, about 3 minutes. Add the beans and chipotle or red pepper (if using).
  4. Remove the tortillas from the oven. Spoon some beans onto each, then top each with some salsa, 1 fried egg, and some cheese.
  5. Bake until the cheese has melted. Serve with the avocado.

Today was an amazing day and I know it was a blessing from God…I did everything I needed to do, paid for everything that needed to get paid for and had some left over to spare. Now, I can feel a sense of relief because he is always on TIME!!!!



Dirty Rice Recipe

Dirty Rice


  • 3 tablespoons vegetable oil
  • 1 pound ground turkey
  • 1 cup yellow onion, finely chopped
  • 3/4 cup green bell pepper, finely chopped
  • 1/4 cup celery, finely chopped
  • 2 teaspoons garlic,  minced
  • 1 tablespoon season salt
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 cups chicken stock
  • 2 bay leaves
  • 5 cups cooked rice, chilled


  1. Directions
  2.  In a large, heavy sauté pan or pot, heat 2 tablespoons of the oil over medium-high heat Stir in  the onions, bell peppers, celery, garlic, season salt, salt and pepper, and cook  until soft about 5 minutes.
  3. Add the remaining tablespoon of oil with the ground turkey and cook  until the meat is browned, about 6 minutes.
  4. Add the stock and bay leaves, and scrape the bottom of the pan to loosen any browned bits. Bring to a boil, and lower the heat and simmer for 5 minutes.
  5. Add the rice and stir thoroughly.
  6. Cook until the rice is heated through, about 5 minutes.
  7. Remove from the heat and remove the bay leaves and serve.
